Ingredients:
- 2 ripe bananas, frozen
- 1 ripe avocado
- 1/4 cup shelled pistachios, chopped
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
Instructions:
In a food processor, combine frozen bananas, avocado, maple syrup, and vanilla extract
Blend until smooth and creamy, scraping down the sides as needed
Add chopped pistachios and pulse a few times to incorporate
Serve immediately for a soft-serve consistency or transfer to a container and freeze for 1-2 hours for a firmer texture
Garnish with additional chopped pistachios before serving, if desired
