Single Serve Egg and Chickpea Breakfast

This Egg and Chickpea Breakfast Single Serve is a quick and healthy way to start the day. It tastes great, has a lot of protein and fiber, and is perfect for a one-person breakfast.

Ingredients:

  • 1/2 cup canned chickpeas, drained and rinsed
  • 1 large egg
  • 1/4 cup diced tomatoes
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced onion
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions:

In a small skillet, heat the olive oil over medium heat

Add the diced onion and red bell pepper, and saut until they start to soften, about 2-3 minutes

Stir in the chickpeas, diced tomatoes, cumin powder, paprika, salt, and pepper

Cook for another 2-3 minutes, or until the chickpeas are heated through

Create a well in the center of the skillet and crack the egg into it

Season the egg with a pinch of salt and pepper

Cover the skillet with a lid and cook for about 4-5 minutes, or until the egg whites are set, but the yolk is still runny

Garnish with fresh parsley and serve hot
