Cherry Limeade Bars

These vegan Cherry Limeade Bars are a delightful combination of tangy lime and sweet cherries, nestled atop a nutty almond flour crust. Perfect for a refreshing summer treat or any time you crave a burst of fruity flavor.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt
  • 1 cup frozen cherries, thawed and chopped
  • 1/4 cup lime juice
  • 2 tablespoons cornstarch
  • 1/4 cup powdered sugar, for dusting

Instructions:

Preheat the oven to 350F 175C

Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal

In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt

Press the mixture evenly into the bottom of the prepared pan

Bake the crust for 12-15 minutes, until golden brown

Remove from the oven and let it cool slightly

In a saucepan, combine chopped cherries, lime juice, and cornstarch

Cook over medium heat, stirring constantly until the mixture thickens, about 5 minutes

Pour the cherry limeade mixture over the cooled crust, spreading it evenly

Place the pan back in the oven and bake for another 10-12 minutes

Remove from the oven and let it cool completely in the pan

Once cooled, refrigerate for at least 2 hours to set

Once set, use the parchment paper overhang to lift the bars out of the pan

Dust with powdered sugar before slicing into squares

Serve chilled and enjoy

Caprese-Stuffed Garlic Butter Portobellos Burger

This burger is a gourmet twist on a classic Caprese salad, with juicy grilled portobello mushrooms stuffed with a flavorful mixture of cherry tomatoes, fresh mozzarella, and basil. The garlic butter and balsamic glaze take it to the next level

Ingredients:

  • 4 large portobello mushrooms, stems removed
  • 4 tablespoons garlic butter
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella cheese, diced
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 4 hamburger buns
  • 1/4 cup balsamic glaze

Instructions:

Warm up the grill over medium-high heat

Add salt and pepper to the cleaned portobello mushrooms and brush both sides with garlic butter

Put the portobellos on the grill with the caps facing down

Cook for four to five minutes on each side, or until they are soft and have grill marks

Put the cherry tomatoes in half, the mozzarella, the basil, and a pinch of salt and pepper in a bowl

While the mushrooms are cooking, add the mushrooms to the grill

Sprinkle to mix

Take the portobellos off the grill when theyre done and let them cool down a bit

Place a grilled portobello cap-side down on each bun to make a burger

Put some of the caprese salad on top of each portobello mushroom

Put some balsamic glaze on top of each burger

To finish your burger, put the other half of the bun on top

Serve your Caprese-Stuffed Garlic Butter Portobellos Burger right away and enjoy it

  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish
  • Green onions, sliced, for garnish

Instructions:

Diced chicken, soy sauce, hoisin sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes should all be put in a slow cooker

Turn the heat down to low, cover, and cook for three to four hours, or until the chicken is fully cooked

To make a slurry, mix cornstarch and water in a small bowl

Add the slurry to the slow cooker and mix it well with the sauce

Put the cashews in the slow cooker and mix them in

For another 30 minutes, or until the sauce gets thicker, cook

Put it on top of rice and top with sliced green onions and sesame seeds
