Ingredients:

- 5 lbs boneless, skinless chicken breasts, diced
- 1 cup low-sodium soy sauce
- 1/2 cup hoisin sauce
- 1/4 cup rice vinegar
- 1/4 cup honey
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon red pepper flakes
- 1 cup unsalted cashews
- 2 tablespoons cornstarch
- 2 tablespoons water
- Sesame seeds, for garnish
- Green onions, sliced, for garnish
Instructions:
Diced chicken, soy sauce, hoisin sauce, rice vinegar, honey, garlic, ginger, and red pepper flakes should all be put in a slow cooker
Turn the heat down to low, cover, and cook for three to four hours, or until the chicken is fully cooked
To make a slurry, mix cornstarch and water in a small bowl
Add the slurry to the slow cooker and mix it well with the sauce
Put the cashews in the slow cooker and mix them in
For another 30 minutes, or until the sauce gets thicker, cook
Put it on top of rice and top with sliced green onions and sesame seeds
