Cherry Limeade Bars

These vegan Cherry Limeade Bars are a delightful combination of tangy lime and sweet cherries, nestled atop a nutty almond flour crust. Perfect for a refreshing summer treat or any time you crave a burst of fruity flavor.

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt
  • 1 cup frozen cherries, thawed and chopped
  • 1/4 cup lime juice
  • 2 tablespoons cornstarch
  • 1/4 cup powdered sugar, for dusting

Instructions:

Preheat the oven to 350F 175C

Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal

In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt

Press the mixture evenly into the bottom of the prepared pan

Bake the crust for 12-15 minutes, until golden brown

Remove from the oven and let it cool slightly

In a saucepan, combine chopped cherries, lime juice, and cornstarch

Cook over medium heat, stirring constantly until the mixture thickens, about 5 minutes

Pour the cherry limeade mixture over the cooled crust, spreading it evenly

Place the pan back in the oven and bake for another 10-12 minutes

Remove from the oven and let it cool completely in the pan

Once cooled, refrigerate for at least 2 hours to set

Once set, use the parchment paper overhang to lift the bars out of the pan

Dust with powdered sugar before slicing into squares

Serve chilled and enjoy
