Watermelon Fries with Coconut Lime Dip

Enjoy the sweetness of grilled watermelon fries with a cool coconut lime dip. This is a great gluten-free and vegan summer snack for any barbecue.

Ingredients:

  • 1 watermelon, peeled and cut into fry-like shapes
  • 1 cup shredded coconut
  • 1/2 cup coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Preheat the grill to medium-high heat

Thread watermelon fries onto skewers for easier grilling

In a bowl, combine shredded coconut, coconut milk, lime juice, maple syrup, vanilla extract, and a pinch of salt

Mix well to create the dip

Grill watermelon fries for 2-3 minutes per side, or until grill marks appear

Serve watermelon fries with the coconut lime dip on the side
