Ingredients:
- 1 cup couscous
- 1 1/4 cups water
- 2 medium zucchinis, grated
- 1 cup cooked quinoa
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional
- 2 tablespoons olive oil, for cooking
Instructions:
Bring 1 1/4 cups of water to a boil in a medium-sized saucepan
Add the couscous, mix it in, cover, and take it off the heat
After 5 minutes, use a fork to fluff it up
Grate the zucchini and add it to a large bowl along with the cooked quinoa, breadcrumbs, Parmesan cheese, minced garlic, beaten egg, salt, black pepper, oregano, paprika, and cayenne pepper if using
To make a burger mix, mix it well
Cut the mixture into six equal parts and form each one into a burger patty
Set a pan on medium heat and add the olive oil
These burgers are done when they are golden brown and cooked all the way through
Cook them for about 4 to 5 minutes on each side
Put your favorite burger toppings on top of the zucchini quinoa burgers and serve them on a bed of couscous
