Ingredients:
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 teaspoons pure vanilla extract
- 1 cup hot water
- 1/2 cup unsalted butter
- 1/4 cup heavy cream
- 2 cups semisweet chocolate chips
- Sprinkles optional, for decoration
Instructions:
Set the oven temperature to 175C 350F
Use paper liners to line a cupcake tin
Mix the flour, sugar, baking soda, cocoa powder, baking powder, and salt in a sizable mixing bowl
To the dry ingredients, add the eggs, buttermilk, vegetable oil, and vanilla extract
Blend until thoroughly blended
Once the batter is smooth, stir in the hot water
Its acceptable that the batter will be thin
Pour the batter into each cupcake liner, filling it about two thirds full
When a toothpick is inserted into the center of a cupcake, it should come out clean after 18 to 20 minutes of baking in a preheated oven
After taking the cupcakes out of the oven, allow them to cool for a few minutes in the pan before moving them to a wire rack to finish cooling
Make the chocolate ganache while the cupcakes are cooling
Heat the heavy cream and unsalted butter in a small saucepan over low heat
Remove the mixture from the heat source when its hot but not boiling, then stir in the semisweet chocolate chips until the ganache is glossy and smooth
Spoon the ganache over the cooled cupcakes after allowing it to cool slightly
If desired, top with sprinkles
Before serving your mouthwatering old-fashioned chocolate buttermilk cupcakes, let the ganache set
