Ingredients:
- 1 package refrigerated sugar cookie dough
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup cherry pie filling
- Fresh cherries for garnish
- Mint leaves for garnish
Instructions:
Preheat the oven to the temperature indicated on the sugar cookie dough package
Grease a mini muffin tin or use a silicone mini muffin pan
Slice the sugar cookie dough into rounds and press each round into a mini muffin cup, forming a small cup shape
Bake the cookie cups according to the package instructions or until they are golden brown and set
Remove the cookie cups from the oven and let them cool completely in the pan
In a mixing bowl, whip the heavy whipping cream until soft peaks form
Gradually add the powdered sugar and vanilla extract while continuing to whip the cream until stiff peaks form
Gently fold the cherry pie filling into the whipped cream until well combined
Spoon or pipe the cherry mousse into the cooled cookie cups
Refrigerate the filled cookie cups for at least 30 minutes to allow the mousse to set
Before serving, garnish each cookie cup with a fresh cherry and a small mint leaf
Serve and enjoy
