Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups diced apples such as Granny Smith
  • 1/4 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • Oil for frying
  • Powdered sugar for dusting
  • For the Caramel Dipping Sauce:
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Mix the flour, baking powder, granulated sugar, and salt in a sizable bowl

Beat the eggs in a different bowl, then mix in the milk and vanilla

Mixing until just combined, pour the wet ingredients into the dry ingredients

Stir in the grated Parmesan cheese, ricotta cheese, and diced apples

In a deep pan or skillet, heat up to 2 inches of oil to 350 degrees Fahrenheit 175 degrees Celsius

Spoonfuls of the apple fritter batter should be dropped into the heated oil and fried for three to four minutes on each side, or until golden brown

Using a slotted spoon, remove the fritters and set them on paper towels to absorb any remaining oil

For the Dipping Sauce Caramel: Melt the granulated sugar in a saucepan over medium heat, stirring constantly until it becomes amber in color

Incorporate the butter and mix until it melts and blends well

Slowly pour in the heavy cream, stirring all the time

Take care, as the mixture will start to bubble

Cook for a further two to three minutes, or until the sauce slightly thickens, after stirring in the vanilla extract and a small pinch of salt

Present the warm apple fritters with the caramel dipping sauce and sprinkled with powdered sugar
